NOVA culinary students, accompanied by Chef Mike Herbert, attended the 44th Annual Military Culinary Arts Competition at Fort Lee, Va. This annual event showcases the culinary talent of various branches of the US military from all over the world. NOVA students were amazed by culinary displays that included works of aspic, pulled sugar, chocolate, tallow, and pastillage. The military culinary teams work for weeks to plan and execute their creations, with particular attention to composition, color, flow, contrast and accessibility.
Students also observed a hot food competition, where teams participated in a timed event. Groups from the US Army, Navy, Marines, Air Force, and Coast Guard, and foreign military teams competed. They were judged on sanitation, organization, cooperation, creativity, flavor, eye appeal and overall quality.
